![]() So this week, give Valentine’s Day the middle finger and treat your fine self to a dessert that isn’t made for two to share, whether you’re single or not. I’d seen a few similar recipes about 3-4 years ago when mug cakes were becoming all the rage, but I feel like a 1 minute chocolate chip cookie deserves not to be forgotten with all the other food trends, this cookie deserves as much love as all other cookies. No oven, no greasing big baking trays, no dough chilling, no weighing things, just straight up instant chocolate chip loveliness. Basically, if you have a bowl, a spoon and a microwave, you can make this cookie. In less than 3 minutes, you can get your bum off the couch and have this ridiculously delicious Microwave Chocolate Chip Cookie in your mouth. This cookie is also criminally easy to make. In my opinion, the softer and meltier, the better! This tastes exactly like a fresh cookie hot from the oven, just without a crisp edge. Soft, warm vanilla-scented cookie dough with gooey puddles of melted chocolate in every bite. ![]() This Microwave Chocolate Chip Cookie for one is the ultimate individual treat. Desserts of any size and flavour should be savoured and loved, and you should not be judged for enjoying one all to yourself. The only problem is, usually they come in the form of a ready-made trifle in a meal deal, or a dry-ass mug cake recipe you saw on Facebook. Single serving desserts are a magical thing, a portion of something delicious that you have absolutely no obligation or social expectation to share with anyone. This is also a post for people who DO have a sweetheart, but have absolutely zero desire to share desserts with them. This post is dedicated to everyone who doesn’t have a sweetheart this month, and who quite frankly doesn’t care. Then I have a sweet treat available whenever I want, I do have to warn you though the bag doesn’t last nearly as long as you would hope! I also love how easy this dough is to throw together! It takes less than 15 minutes and you have perfectly edible cookie dough to enjoy! I always scoop it up like I would cookies, pop it in the freezer for an hour and transfer to a ziplock bag. You just need the temperature of the flour to reach 165 F. ![]() Let it sit for a few minutes and you are good to go! As for the raw flour, you can fix that easily by baking the flour in the oven at 350 for 5 minutes. In the past when I made cookie dough without the egg, it never had the right texture, but this recipe solves that issue by using a flax egg! Literally you just have to mix together 1 tablespoon of ground flaxseed and 2 tablespoons of water. Yes, if you didn’t know raw flour does pose a small risk of salmonella. However, I do always have the lingering thought of I probably shouldn’t be eating raw eggs and flour. ![]() Whenever I make cookies, I almost always sneak a little bit of the dough. It has the perfect texture of regular cookie dough, but you don’t have to have that lingering thought of eating raw eggs.Ĭookie dough is one of those things that is so hard for me to resist.
